Gennaro Auricchio, founded its company in 1877 in San Giuseppe Vesuviano, close to Naples.Today all Auricchio is produced in Cremona. Auricchio Giovane  is sheep's milk provalone produced according to the ancient, traditional recipe of Auricchio. After a short ageing, the cheese develops a soft texture and delicate taste.
The wheel is hand carved and finished.
 
Auricchio Giovane is an excellent base for starters and main courses. Thanks to its characteristic shape, Auricchio Giovane makes a unique gift for either particular events or the traditional Easter and Christmas celebrations.
